She was born in New York in 1932 and is survived by her son, John Holliday, and two of her daughters, along with numerous grandchildren and great-grandchildren. Eileen worked tirelessly throughout her life, earning her degree in nutrition from CSU Extension in Fort Collins, Colorado, and serving as a nutrition teacher.
John Holliday, her son, has initiated a fundraiser to complete his mother’s final memorial journey. Despite years passing since her burial, Eileen’s grave remains without a permanent marker. John, after many prayers and efforts, was able to find a beautiful gravestone marker but lacks the necessary funds to have it engraved and placed. He also seeks help to cover travel expenses and the cost of a Rabbi to lead a small service at her gravesite.
Eileen’s legacy as a loving and kind mother, deeply rooted in her Jewish faith, continues to inspire those who knew her. John recalls his mother fondly, remembering her as “the mensch,” a person of integrity and honor, as she would often call him in return.
